Getting Healthy

Alright, so a large portion of my 101 in 1001 is devoted to getting healthier. And there's no better time than the present! Okay, actually at work we just started our second Biggest Loser challenge, and OMG was I shocked at my weight. I can hardly believe I've gained 12 pounds since the wedding. This is the most I've ever weighed. Ever! So I am getting serious about getting healthier and I'm starting at number 58 of my 101 in 1001, no fast food for two months, today. Wish me luck, I know I will need it.

LOL

For Christmas my mom gave me and Jr tickets to go see Comedian Gabriel Iglesias. This couldn't have been a more perfect gift, especially for Jr. He's been wanting to see Gabriel Iglesias for years, but he's always sold out by the time we realize he's in the area. The show was this past Friday and it was hilarious! You can check out some videos and his tour dates here. Oh and I get to cross off number 10 on 101 in 1001 list. I will be blogging more, I am just working on getting my home computer up and running.

Cookie Exchange

So my work had it's annual cookie exchange last Friday. And I participated, so this means that's one more thing off of my 101 in 1001 list! It wasn't exactly what I had expected but hey I did it and it counts.

I took four dozen cookies and came home with 4 dozens. There were chocolate chip cookies, oatmeal cookies, chocolate peanut butter bars, mint chocolate chip cookies, and that's all I can remember. I took half to my parents and half to my MIL's and the highest rating by 12 year-old brother in law gave them was a 6 and parents did not like any of them. As for me, I took my persimmon cookies, normally I make a traditional version but this year I decided to try something new.

Traditional Persimmon Raisin Cookies
Ingredients:
1 C Persimmon pulp (about 2 persimmons)
1/2 C of Shortening or butter
1 C Sugar
1 Egg
1 1/2 C Flour
1/2 tsp Salt
1 tsp Baking soda
1 tsp cinnamon
1/4 tsp Cloves
1/2 tsp Nutmeg
1 C Walnuts, chopped
1 C Raisins

Orange Cranberry Persimmon Cookies

To make these I sub the walnuts and raisins for cranberries and pecans (or any nut really). And I add the zest of one orange and about 2 tablespoons of fresh OJ to the persimmon mixture.

Directions

1. Preheat oven to 350 degrees and grease your cookie sheets.

2. In a medium bowl, cream together the sugar and shortening. Beat in the egg and persimmon pulp. In a separate bowl combine the flour, baking soda, salt, cinnamon, cloves, and nutmeg (I like to sift these ingredients but I think that's just personal preference). Stir the dry ingredients into the persimmon mixture.

3. Stir in the nuts and raisins. Drop by rounded spoonfuls onto the prepared cookie sheet. (The dough will be thick, these cookies almost have a cake-like texture)

4. Bake for 8-10 minutes and allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I really liked the cranberry Orange version and even prefer it to the original version. I will add pictures as soon as I get my laptop up and running. I'd like to have a cookie exchange with family and friends, I think it could be a lot of fun.

only 99 left

So I have one more thing (okay barely my second) off of my 101 in 1001. See a big name concert. Jay-Z, I think he def qualifies as big name. I went with my husband and 2 bffs. None of us are huge Jay-Z fans, but we decided to go anyways since we got a good deal on pre-sale tickets. And it was amazing! He does a great show and he seems to really appreciate his fans. and for anyone interested his opening acts were J. Cole (loved his style), Wale and N.E.R.D.

I haven't updated this blog in a while but hopefully that won't happen again. My laptop died =( but I should be replacing it soon. In the mean time I will just have to update from my BIL's computer. I think I will be updating with recipes since I've lots of cooking done recently. Stay tuned.
